I completed a Bachelor of Science in Dietetics and Applied Nutrition at Johnson & Wales University in 2022. When attending these courses, I was able to connect my prior culinary knowledge. A major unique opportunity at Johnson & Wales University is the mandatory lab courses where I worked with different dietary restrictions, created heathier desserts, and developed menu items for people with varying health conditions. During this time, I was able to maintain high academic standing while double majoring in Culinary Arts. Here are a few memories of the amazing and knowledgeable time I spent throughout my time learning Dietetics!

Advanced Medical Nutrition Therapy is one of the last courses to take, which implies it uses information from previous courses. I was responsible for making a portfolio that describes multiple different diseases and the appropriate diets. Click on the link below to see the portfolio!

While taking Food Science, my group and I did an experiment on the effects of bromelain in pineapple juice. This was a very interesting experiment because food has various components and most people do not know the importance of the effects of heating. In my Biochemistry class, we were given an amazing opportunity to burn food to determine the calories. This hands-on experience gave me a perspective on how calories and fat are determined, which is burning the food and calculating the water weight in tin can before and after.
